The aperitif in Genoa is an important moment; it is always the right time for an aperitif and very few people would say no to it: in the historic bars, in the typical or trendy places in the old taverns and in all other bars of the town, in the cafeterias of the museums and in the so many bars with open space.
Among the so many international cocktails and soft drinks, there are two local specialities the glass "gotto" of Liguria white wine accompanied by the famous focaccia and the "baxeichito" based on the famous basil.
And what’s more: plenty of dishes with delicacies to garnish the glasses!
Crisps, olives and cocktail snacks, but the aperitif is often accompanied by a very special selection of food such as: slices of plain focaccia or garnished focaccia, even the cheese focaccia of Recco, anchovies, panissa and hot cuculli, a taste of pasta with pesto, dried oil tomatoes, grilled vegetables, small tastes of vegetable pies and frittata, salmon canape, small pieces of cima, cod fritters, special salami, slivers of cheese and even octopus with parsley; everything depends on the place and the season.
There are many places that made of the aperitif their distinguishing feature following a tradition dating back to generations of owners, barmen and customers! And there are places where bits of Genoa history and economics (but not only) were written in front of an aperitif...
